Chef Nikki!

I got some cookbooks at the library today to help me maybe break out of a creative rut I’ve gotten into in the kitchen lately. I’m trying to get back to a healthier lifestyle than the one I maintained through the holidays and it’s been tough! I did work out today but I ended up over on my calories due to stress eating. I had quite a show down with Directv, but I won’t get into that right now.

Anyway, I was thumbing through one of the cook books and saw a recipe I just couldn’t resist. Oddly enough, I had ALMOST all of the ingredients too, so here’s what I just made for tomorrow morning.

Cran blueberry Strata

8 slices of wheat bread cut into one inch cubes
1 cup low fat cream cheese
1/2 cup maple syrup
1/4 cup canned blueberries
1/4 cup dried cranberries, chopped
2/3 cup dried nonfat milk
6 eggs
pinch cinnamon
pinch nutmeg
tsp. vanilla

Place half the bread cubes in the bottom of an ungreased loaf pan. Top with the cream cheese mixed with the syrup. Layer on the cranberries and blueberries.
Mix milk powder, 1 cup water and other flavorings together and pour over the concoction.

Let sit at least 2 hrs. or overnight and bake at 375 for 35 mins. or until set.

I’ll let you know how it turns out in the am! I’ve been craving french toast and I think this is going to be delicious!

Btw, yes, I know that this isn’t exactly healthy, but at 300 calories or less per portion and 100% whole wheat bread and protein from the milk powder and the eggs, it’s not a horrible choice either!
